Sometimes there isn't a particularly interesting back story behind a creation. In this case mango salsa is simply something I'd had sat on the list of ideas for a while, and I particularly fancied something light and refreshing to go with the first few sunny days of the year. Anyway, it is what it is, and I enjoyed in nontheless.
Mango salsa is primarily dictated by two components; how much mango you add, and how much cilantro you put in there. I'm a particular fan of both, so I had no hesitations on going fairly heavy on both aspects. The mango gives a predictably familiar tropical flavour, whilst the abundance of cilantro gives things a nice fresh edge. The addition of lime adds to the sharpness of the cilantro, giving everything what I can only describe as a 'clean' flavour. The choice of chicken here was simply to add more bulk, but whilst also keeping the flavour quite light; I didn't exactly want to throw a steak in there.
The choice of Stilton for this is an unusual one. Most people youldn't pair cheese and salsa together outside a plate of nachos, but if you have a stronger, bolder cheese then it can work due to the acidic nature of the tomatoes and lime acting to cut the cheese down; I've similarly used this justification on other creations, such as when pairing brie and blueberry. Stilton itself is reasonable strong, but still fairly creamy in flavour (though not texture), and it is often infused with a variety of flavors making it easy to find something a little more unique to match what you're adding it to; I opted for a mango and ginger infused creation.
Anyway, the background story may be lacking, but the end creation is most certainly not. Enjoy. :)

A fresh chicken, mango and lime salsa, paired with hand crumbled, ginger infused Stilton.
You don't need to overcook the chicken; keep it light and you'll get chicken with just a touch of bronzing that isn't dry to eat. When making the salsa, you can vary things up with lemon or even orange as the citrus component.
