The site is called 'bread and cheese', not 'grilled cheese sandwiches'; the rule for inclusion is simply that the dish must use both bread and cheese. This covers not just grilled cheese sandwiches, cheese on toast and a variety of paninis, but could also (in theory) cover things like a cheese dip with bread sticks.
Although cheese is high in fat (and often sodium), most of the creations I make only use about 50 to 100 grams of cheese per serving, which at once or twice per week is unlikely to have any meaningful health impact. Cheese itself probably has a bit of a bad reputation more for the way it's used in large amounts in certain dishes (eg: pizza) due to the fat content, but in moderation actually has a log of good nutrients, such as calcium and vitamin D. Bottom line: cheese is absolutely fine in moderation.
Honestly, I don't actually measure anything. When I cook it's done entirely by sight, smell and the occasional quick taste. For example, rather than setting a timer to know when something will finish cooking, I actually go and look at the food to check if it's cooked instead. I find this leads to more accurate results.
I believe most adult cats and dogs are lactose intollerant, so it's probably not a good idea to be feeding them lots of cheese. I'd stick to a more traditional diet for your beloved pets. As for the velociraptor, I'm pretty sure they only eat people so probably wouldn't enjoy something with bread and cheese in it anyway.
